Hmm… looks like General Tso’s Tofu for dinner tonight. I think I’ll try this variant I found recently, rather than my usual one.. I’ll see if I like it better.

General Tao’s Tofu

Ingredients (vegan versions for all are available):

  • 1 box of firm tofu
  • Vegan Egg replacer for 1 egg
  • 3/4 cup cornstarch
  • vegetable oil for frying
  • 3 chopped green onions
  • 1 Tablespoon minced ginger
  • 1 Tablespoon minced garlic
  • 2/3 cup vegetable stock
  • 2 Tablespoons soy sauce
  • 4 Tablespoons sugar
  • red pepper to taste
  • 1 Tablespoon sherry (optional)
  • 1 Tablespoon white vinegar
  • steamed broccoli

Directions:

Drain, dry and cut tofu into 1 inch chunks. You can freeze tofu the night before to get a more “chicken-like” consistency, but it isn’t necessary. Mix the egg replacer as specified on the box and add an additional 3 tablespoons water. Dip tofu in egg replacer/water mixture and coat completely. Sprinkle 3/4 cup cornstarch over tofu and coat completely. Watch out that the cornstarch doesn’t clump up at the bottom of the bowl.

Heat oil in pan and fry tofu pieces until golden. Drain oil.

Heat 3 Tablespoons vegetable oil in pan on medium heat. Add green onions, ginger and garlic, cook for about 2 minutes. Be careful not to burn garlic. Add vegetable stock, soy sauce, sugar, red pepper and vinegar. Mix 2 Tablespoons water with 1 Tablespoon cornstarch and pour into mixture stirring well. Add fried tofu and coat evenly.

Serve immediately with steamed broccoli over your choice of rice.

Serves: 4

Preparation time: 30 Minutes

My cough is all gone… it must’ve been some sort of quickie fluke. I’m happy it only lasted a brief time.

Something that creeps the paranoid in me out is the fact that I can be tracked by my cell-phone. (And the phone has to be close to me at all times, because I’m on tech-call 24/7, even when I’m not on codeRed call)

I wonder where BQ ran off to?

Dan and I are getting together on Monday, but probably won’t do a movie. It’s more fun to just park at a restaurant and gabby-gab. I do want to go pick up Bubba Hotep on Monday when Dan and I go out… (when he gets his copy of LOTR3).

Cool that the mood theme editor is fixed, at last.. I’m going to have to work on that.

Cartoon Network’s “animated watermark with noise” really detracts from watching movies.

Also, Gordanians? Those are Teen Titan monsters. No Katar Hol? I do like that they portrayed the Thanagarians true to form. I’m impressed how it ended… I’d be very interested in seeing if the show takes it where the season finale left off. Maybe the rumors of the JLU will actually take place. I *did* like seeing the gang in Secret ID, and a Mental dmg shield that does killing damage.

Justice League, from Emmy-winner Bruce Timm, debuted on Cartoon Network in November 2001. Justice League brings together seven of the world’s top superheroes – Batman, Superman, Wonder Woman, Green Lantern, Martian Manhunter, the Flash and Hawkgirl – to form an alliance that protects the Earth. The group keeps close tabs on criminal conspiracies and otherworldly threats as it orbits high above the Earth in its high-tech monitoring station, The Watchtower. And because all these heroes are used to working solo, tensions often arise when they must join forces to fight a threat.

In “Starcrossed,” the fate of the world is literally at stake when a huge army arrives from Thanagar, Hawkgirl’s home planet. The Earth’s leaders are warned of an imminent invasion by the Gordanians, the mortal enemies of Thanagar. Secrets about Hawkgirl’s past are revealed, and no one is more surprised than Green Lantern, who has a budding romantic relationship with his winged colleague. While the Thanagarian leaders claim to be here to help the Earth, not even Hawkgirl is fully aware of their true plans. As “Starcrossed” unfolds, friends turn into enemies and the League must deal with a betrayal from one of its own. Facing this unprecedented alien threat, the Justice League is forced to convene using their secret identities. As “Starcrossed,” concludes, the Justice League is changed forever and forced to be reborn.

While the series Justice League ends with “Starcrossed,” a new series starring the superheroes is slated for August 7, 2004. The heroes of the Justice League return in August with a new series, Justice League Unlimited, which incorporates a bold new look and a much larger scope. Batman, Superman, Wonder Woman and Green Lantern continue to lead the universe’s most powerful superheroes in an effort to stop criminal plots and alien threats that endanger the universe.

In Justice League Unlimited, they are joined by an even greater collection of heroes, some of whom are well-known, like Supergirl, Green Arrow and the Atom, as well as some that are less familiar, like Booster Gold, Hawk & Dove, Elongated Man, The Question, Mister Miracle, Big Barda and Zatanna. Each half-hour will tell a power-packed story, combining some of the original heroes with new ones as they band together to battle alien invasions, powerful sorcerers, vast shadowy conspiracies and even ancient gods.
