6910 – Thor's Day

Training went well.. a good number of concerned parents showed up, and everything rolled smoothly. Big Kahuna was a surprise visitor… must’ve come right over after getting off of the plane. The School staff was wonderfully courteous and very helpful… the media center brought back many memories as a page, cataloger and bookstore employee. I always did like the kid’s books the most.


Tech trouble seems to be simmered down now. Hopefully it’ll stay that way.


I’ve been getting into the habit of picking up a little dinner once a week or so on the way home from work at this little carribean diner over by the bus stop. I’ve become rather well-liked there, because I appreciate good food, and take a moment to talk to the folks during the slow times. Lots of Veggie, even Vegan options to eat, which surprised me, and is what keeps me coming back. Good food, lots of it, inexpensive and a friendly atmosphere. What’s not to like? There are advantages to not looking like a suit… I think folks there are a lot more comfortable talking with a “clean cut” hippie-type guy, at least at first. They make a Veggie-mango stir-fry sort of thing that is awesome, and the plantains are decadent.


Spicy Sancocho

4 SERVINGS VEGAN

Sancocho, a hearty Caribbean stew, offers a taste of island “comfort food.” Serve this meatless version with Jamaican Cook-Up Rice (recipe this page) or any other rice dish. Look for plantains in large supermarkets or Latin or Hispanic food shops.

1 Tbs. canola oil
1 medium yellow onion, diced
1 medium green bell pepper, diced
8 oz. white mushrooms, sliced
1 or 2 jalapeno peppers, seeded
and minced
2 cups vegetable stock, canned broth
or water
14-oz. can stewed tomatoes
2 large carrots, peeled and diced
1 large green plantain, peeled and
coarsely chopped
1 large boiling potato, peeled and
diced
2 Tbs. minced fresh parsley
1 Tbs. chopped fresh oregano or 1 tsp.
dried oregano
1/2 tsp. freshly ground black pepper
1/2 tsp. salt

In large pot, heat oil over medium heat Add onion, bell pepper, mushrooms and jalapenos and cook, stirring often, until vegetables begin to soften, about 7 minutes. Stir in vegetable stock, stewed tome toes, carrots, plantain, potato and seasonings and bring to a simmer. Cook over medium-low heat, stirring occasionally until potato and carrots are tender, about 25 minutes. Serve hot.

I bought myself Dawn of War Last night as a personal reward for attending the meeting. I look forward to losing many hours playing it. I think it’d be fun to get eryx, sammy, GP and whoever else wants to join in as part of a massive death match! I’m limiting myself to one mission a night on weeknights, though. don’t want to blink and have it be 4am, like age of empires!
